Cream of mushroom soup was the first soup I fell in love with as a child. now we make it with chopped mushrooms, homemade chicken stock (if we have some on hand), and rich cream.

Excellent! this will be my new go to pea soup recipe. I'm trying to eat healthy, mostly vegetarian but yummy food and this fits the bill. I did not have potatoes but I honestly did not miss them. Some reviewers said they had to cook the peas for a much longer time and that they were still not soft, but I did not have any problems. Sometimes dried peas can be old and then they may not soften? I used Knorr Chicken flavored bouillon to make my chicken broth (if you do that, leave out the salt given in the recipe or it will be too salty and it made for an excellent soup coupled with Ina's ingredients.


I love borscht - it's a very common soup here in Russia! I made borscht last Monday, and again yesterday. I prefer mine meatless - beetroot soups have so much flavour on their own, I think..


Not all gazpachos are made with tomatoes. White gazpacho is a classic dish from Spain, earlier versions dating back to when the Moors controlled Andalucia. This version is made with bread, blanched almonds, green grapes, cucumbers, olive oil, and garlic. Odd combination you might think, but let me assure you, it truly is delicious. There's no dairy. The soup gets body and protein from the blanched almonds. The bread acts as a thickener. The cucumbers are wonderfully cooling.


Pumpkin soup is seriously good stuff. It basically is what I imagine fall to taste like. I especially love that I can walk away from this recipe and do whatever I want in the interim. Like make some pumpkin cookie bars.

Actually cioppino, a tasty fish and shellfish stew, is pretty easy to make if you have the ingredients. The trick is using the highest quality seafood.
Note that cioppino is typically served with the shellfish still in their shells, making for somewhat messy eating. It's a lot of fun for an informal gathering. Have plenty of napkins available and don't wear white.
