Ingredients – Makes about 4 (7 inch diameter) Belgian style waffles
- 2 cups all-purpose flour
- 1 tbsp sugar
- 1 tbsp baking powder
- 1/4 tsp salt
- 2 cups milk
- 1 cup chopped ripe mangoes
- 2 tbsp vegetable oil
Method
Sift the dry ingredients together into a bowl.
Give it a quick mix.
In another bowl, mix the milk and oil together until well blended.
Add the wet into the dry and whisk just until dry ingredients are
thoroughly moistened.
Stir in the mangoes and whisk well.
Now proceed with your waffle iron instructions. It might differ from
mine. I dropped about 1 cup of the batter
into my preheated waffle maker
and then proceeded to continue the cooking for about 4 minutes.
Once done, tada – crispy yet spongy mango waffles are ready for yummy
fruity breakfast.
I served them with few more mangoes pieces and little honey.
